OCCI integrates visual arts into culinary curriculumThe Oregon Coast Culinary Institute is hosting Chef Brad Barnes, co-owner of B & B Solutions, to provide training in offering a unique course in Visual Principles as Applied to the Culinary Arts to students. Barnes, who holds a master’s degree in art along with several American Culinary Federation certifications, will be leading two full days of training for the OCCI faculty members on Saturday and Sunday. On Monday and Tuesday of next week, Barnes will follow that up with classroom instruction, leading OCCI students while the instructors observe. The new course will integrate the subjects of visual perception, composition and an understanding associated with line, color and form into the students’ culinary education. Once the training is complete, OCCI faculty members will be able to teach Visual Principles as Applied to the Culinary Arts as part of its associate degree programs, making OCCI one of the few schools in the United States to offer the course. Barnes will be working with OCCI students in the classroom from 8 a.m. to 3:30 p.m. on Monday and Tuesday at OCCI.
